Chocolate Peanut Butter Oatmeal (from @eugreenia!)

“I’m all about convenience/simplicity when it comes to home food, so if I can make a meal in five minutes, I will. This Chocolate Peanut Butter Oatmeal recipe is especially perfect for those days when you wake up at 11 and can’t decide whether to eat breakfast or lunch!”

Yield : 2 servings

Ingredients

  • 3/4 cup rolled oats

  • 1 cup milk alternative: oat, almond, soy—whatever you have on hand!

  • 2 tablespoons cacao powder: look for Fair Trade when you can!

  • 2 tablespoons peanut butter: choose crunchy or smooth, depending on your preference!

  • 1 tablespoon flax seeds

  • 1 tablespoon maple/agave syrup

    Toppings:

  • 1 banana, chopped: Look for organic and Fair Trade when possible

  • Drizzle of almond butter

  • Sprinkle of hemp seeds

  • Purely Elizabeth sea salt granola 

Preparation:

  1. Add all ingredients to a medium pot and cook over medium heat until all liquid is absorbed. 

  2. Remove from heat and scoop into a bowl.

  3. Add toppings! Get creative and add more things if you’re inspired!
