Hello Grounded Grub Community!

Every week we’re sent amazing articles, books, podcasts and other content from our community. We love hearing from everyone and having these resources, so we decided to start pooling together these recommendations, as well as some of our favorites, and sharing them once a week on Tuesdays. We hope you enjoy and feel inspired to share with us if you see/hear/try something that inspires you in the future!

Today: April 28, 2020

What happened on Grounded Grub last week: 

  • We started off this week with a celebration of Earth Day, where we reflected on our values and the intersection between accessibility and sustainability, and we ran a series of instagram stories that shared different steps we can all be taking toward a more sustainable future!

  • Then we featured an exciting interview with Eugenia, a young vegan activist from Hong Kong. We were super excited to hear about everything she does and how she has made veganism a core part of her life. This interview with her was the most recent installment of our Faces of Food series, and was written by contributor Nicole Lee.

  • Our time with Eugenia didn’t stop there! She shared with us a simple yet hearty Chocolate Peanut Butter Oatmeal bowl she loves to power her days with!

  • Finally, we closed out the week with a delicious recipe for Cajun Hash Browns! “I know in the depths of this quarantine I’ve been severely missing the comfort of a diner-breakfast with friends on a Sunday morning. Cook up some of these hash browns, put up a pot of coffee, maybe throw together some over-easy eggs, turn on some John Coltrane, and bring the coziness of the diner-booth to your kitchen.”

Coming up on Grounded Grub…

It has been a flurry of activity in the Grounded Grub email inbox, and we are thrilled about all the different things we have in the works...but we’ll just stick to what we have going on this week: 

  • This week we take a moment to reintroduce themselves to our growing community! We’ve been having such an incredible time writing articles, developing recipes, and working with so many of you, and we want to make sure the newer member of our community know what we’re all about!

  • Later in the week, we feature an interview we feel so incredibly lucky to have been able to do! We got the chance to talk with Manju Kumar (@zerowastefarmer), the CEO of Brush with Bamboo, and a social media influencer who promotes waste reduction, sustainable farming practices, and love for earth on a daily basis!

  • Finally, we close out this week with a refreshing Israeli Salad, packed with diced cucumber, tomatoes, bright citrus, and goats-milk feta cheese!

  • “What COVID is exposing about the climate movement” Michael Grunwald, Politico. “the dramatic reductions in overall emissions during this time of individual confinement are a clear demonstration that most emissions are caused, directly or not, by individual activities—the fuel we burn, the electricity we consume, the factories and farms that make the stuff we buy and eat. It’s horrible that it took an economy-crushing public health disaster to illustrate this on a large scale, but when people do less, for awful, virus-related reasons or noble, climate-related reasons, they emit less.” Check out this great article here.

Interested in seizing the opportunities of warming weather and doing some mushroom foraging? Look no further! “Even if you don’t live on the west coast, this book is worth buying just because David Arora is brilliant and hilarious. You wouldn’t think that a mushroom guide would be funny, but this one is a scream. I was laughing out loud and waking my wife up.”

The Journal — The Only Grocer in Town

“Hundreds of people in Rich Square, N.C. are relying on Frank Timberlake's grocery store for their food during the pandemic. WSJ's Valerie Bauerlein explains how this independent grocer has confronted the coronavirus and kept his doors open.”

This episode is only 15 minutes long, but it delves into a story that sheds light on the small independent business that our communities rely on, and they ways they’re adapting to a sudden spike in community dependence. Listen here, or wherever you stream your podcasts. 

Letter from the editors:

Tomorrow we’ll be celebrating Earth Day remotely, but with the rest of the world. While we’re in the “everyday is Earth Day” camp, it’s always great to have an occasion to reflect and make a focused effort to be more sustainable. While this Earth Day may feel less “collective” than others, we still think there’s lots of changes to make together. Our ideas? 

  • Take time to reflect on what small changes you can make. Reflection is free and the ideas are probably already all there in your head. 

  • If you don’t already, try to eat as plant-based as possible this week.

  • Make some vegetable stock with your veggie scraps or start saving them if you haven’t already. 

  • Set up a composting system at your house or subscribe to a pick-up service 

  • Donate to your favorite environmental charity, there are so many to pick from so do your research and donate generously if you are able.

  • From upcycling art projects to learning how to darn socks, this fun page from a small county in Oregon has a bunch of awesome ideas for how to celebrate this day, and some great information videos too.
